Easy to make slow cooker meal. Fast prep time and it comes out creamy and delicious. Great for those cold winter days.
It takes about 15 to 20 minutes of prep. Toss it in the slow cooker in the morning, and your meal is ready when you get home from work.
Place all the ingredients into a 4-quart slow cooker. Cook on low for 7 to 8 hours. When it's done cooking, puree using an immersion blender or in 4-cup batches in a blender.
Serve piping hot.
As an optional garnish you can top each bowl with crumbled bacon and thin sliced green onions.
For extra creamy soup, replace a ½-cup of broth with a ½-cup of half-n-half or milk.
These are really large! A little over one gallon, they really hold a lot of... "stuff". And they look great, with an "old-time" pioneer feel. They use the old-school lever-latch system, and have a glass top with a silicon gasket to seal them. Jars and lids can go in the dishwasher for easy cleaning!
